Sustainable purchase policies shouldn't end with grass-fed beef, free-range eggs, or local-only produce. In fact, some of the most environmentally-detrimental items served at any local restaurant can't be found on the menu, at all.
Styrofoam cups and 'clam shells', waxed paper to-go boxes, and plastic cutlery and straws are part of a wave of "unwelcome packaging" that fills up local landfills and stifles the recycling process, producing adverse health affects in some instances. Yet these items remain as ubiquitous in the local service industry as ever before.
